Grape Sorbet
• 3 cups grape juice (see page 46)
• 2 tablespoons lecithin granules (if
desired)
• 1⁄2 cup water
• 3 tablespoons soymilk powder
• 1 teaspoon vanilla powder
• 3 tablespoons Demerara sugar or
honey
Every kind of grape can be used. If the taste is
too strong, dilute with some water. Mix ever-
ything well, freeze, homogenise, serve immedi-
ately. Makes 1 litre.
Berry Sorbet
• 2 cups berries (any kind)
• 1 1⁄2 cups water
• 1 1⁄2 tablespoons lemon juice
• 2 tablespoons lecithin granules (if
desired)
• 2 tablespoons soy flour
• 1 teaspoon vanilla powder
• 1⁄2 cup honey or Demerara sugar
If the type of berries has seeds, use mixer or
homogenise with the Champion. You can run
seedless berries through the Champion first
using the screen. Mix all ingredients in a bowl.
Freeze, homogenise, and serve immediately.
Makes 1 litre.
Lemon Sorbet II
• Grated peel from 2 lemons
• 6 tablespoons lemon juice or juice
from 3 lemons
• 1 1⁄2 cups water
• 2 tablespoons lecithin granules (if
desired)
• 2 tablespoons soy flour
• 1 teaspoon vanilla powder
• 3⁄4 cup honey or Demerara sugar

Mix well, freeze, then homogenise. Serve imme-
diately. Makes 1 litre.
Pineapple and
Apricot Sorbet
• 3⁄4 cup homogenised pineapple
• 3⁄4 cup apricot puree
• 1 1⁄2 cups water
• 2 tablespoons lecithin granules (if
desired)
• 2 teaspoons vanilla powder
• 1⁄2 cup Demerara sugar or honey
Mix well in a bowl. Freeze. Homogenise. Serve
immediately. Makes 1 litre.
Orange Sorbet
• 3 cups fresh orange juice
• 1⁄4 cup Demerara sugar or honey
• 2 tablespoons lecithin granules (if
desired)
• 2 tablespoons soymilk powder
• 1⁄2 teaspoon vanilla powder
• 1⁄2 cup water
Mix well and cut into slices. Homogenise with
the juicer and serve immediately. Makes 1 litre.
Peach Sorbet
• 2 cups homogenised peaches
• 1 1⁄2 cups water
• 2 tablespoons lecithin granules (if
desired)
• 1⁄2 cup Demerara sugar or honey
• 1 teaspoon vanilla powder
Homogenise peaches in the Champion and add
the other ingredients. Mix well after adding each
ingredient or mix well in mixer. Freeze, homo-
genise, and serve immediately. Makes 1 litre.
