Preparing the pasta maker:
The pasta maker cannot be cleaned with water!!
This applies to all cleaning processes.
Once you have taken the pasta maker out of the
box, please use a dry paper towel to wipe it off. Use
the clamp to attach the pasta maker to the table
(fig. 1). Insert the crank into the gear for the rollers.
Set the rollers to the largest width so that you can
clean each piece thoroughly using a paper towel
(largest width = Level 1). Note: different sizes can
also be set by simultaneously pulling and turning
the knob.
Additional cleaning before use: Prepare a batch of
dough and run it through the smooth rollers and
the two cutting rollers several times. Make sure
the dough is squeezed all the way into the corners,
where oil from the assembly process may have coll-
ected. AFTERWARD, DISCARD THE DOUGH!!!
Preparing the dough (serves 4):
You will need: 500 g soft wheat flour and 4 eggs
(note: do not use eggs directly out of the refrigera-
tor).
Pour the flour into a bowl and add the eggs in the
middle (fig. 2). Combine using a fork. Next, knead
the dough with your hands to create a smooth,
even mass (fig. 3). If the dough is too dry, add a little
water. If it is too soft, add flour. The dough should
not stick to your fingers. Now turn the dough out
onto your floured work surface (fig. 4). Use a knife
to cut the dough into workable portions (fig. 5).
How to use your pasta maker:
Set the knob on the pasta maker to 1. This sets the
smooth rollers to the largest possible opening. Now
run the dough through the rollers by turning the
crank. Repeat this step 6-7 times. Each time, fold the
dough back together. If the dough is sticky, you can
add a little more flour. Once the dough has an even
consistency, turn the roller setting to 2 and repeat
the process. Then turn it to 3, etc. ... until the dough
reaches the desired thickness.
Next, inset the crank into the cutting rollers. Run the
dough through the desired cutting blade (fig. 10).
Note 1: If the cutting rollers do not cut the dough,
it is too soft. Mix in a little more flour and run the
dough through the smooth rollers again before
repeating the cutting step.
Note 2: If the cutting rollers do not grip the dough,
it is too dry. Add a little water and run the dough
through the rollers again before repeating the cut-
ting step.
Now let the pasta dry for at least an hour, e.g. on
the Westmark pasta tree. Then place the pasta into
plenty of boiling, salted water and let it cook for 2-5
minutes, depending on the thickness. Note: fresh
pasta will cook very quickly. Test the pasta early on
to see whether it is ready.
Pasta maker maintenance:
While using the pasta maker, you can periodically
clean the undersides of the rollers using a paper
towel (fig. 11).
Important: Do not clean the pasta maker with
water or put it in the dishwasher.
Use a brush, a chopstick and paper towels to clean
the pasta maker after use. Do not use a knife. Do
not run cloths through the rollers.
If necessary, you can oil the ends of the rollers using
a little bit of Vaseline.
We recommend storing the pasta maker in its ori-
ginal box.
