In case of using a programme with more than one baking stage,
enable the first stage of the programme using TIMER 1 (see
"BAKING TIMER"), which sets the time for the ongoing stage. If a
program consisting of several "endless" baking stages is used (see the
next paragraph "GRADUAL TEMPERATURE DROP BAKING", the
first stage of the program is automatically enabled when the temperature
set is reached.
At the start of each baking stage, the user-defined settings (temperature,
time and power) are pre-loaded automatically, while an acoustic signal,
consisting of 1, 2 or 3 beeps will sound for the start of stage 1, 2 or 3 (if
available).
To cut off the power supply to the heating elements, press the "STOP"
key. The lighting inside the baking chamber will switch off
automatically. together with the oven.
When the oven is in STOP mode and the program is loaded, changing
only one of the baking parameter exits the selected program.
GRADUAL TEMPERATURE DROP BAKING (endless baking
stages)
It is a baking cycle specifically designed to carry out a "gradual
temperature drop baking", generally consisting of several stages, in
which the passage from one stage to the other is not marked by time but
by achieving the temperature of the subsequent stage. It is generally
suitable for baking delicate products that use low power and therefore
the temperature, when a new batch is placed in the oven, tends to
decrease. The baking procedure used differs from traditional techniques
because the heating elements deliver power during the temperature
decrease. The stages following the first one, therefore, should increase
the power levels delivered so that the temperature would not decrease
too much inside the oven.
See point 3.3 to learn how to program a "gradual temperature drop
baking".

NOTE:
The baking process ends at the discretion of the user
because it is the last stage of the program and being independent of
time could hypothetically have an endless duration.
BAKING TIMER SETTING
The oven has 2 independent "baking timers" which can be controlled
by direct access, using the dedicated keys on the control panel (fig.16
item Q). The baking timers operate with countdown logic. When the set
time is up an acoustic and visual ("flashing") warning will sound to
inform that the set time is up. The buzzer is different in terms of
intermittence type: Timer 1 (T1) emits a continuous acoustic signal;
Timer 2 (T2) emits an intermittent sound signal. The buzzers have a
finite duration setting, from 0 to 60 seconds (default settings are 30
seconds). At the end of this time, the signal will end and the timer will
return to the set value. It is possible to interrupt the sound signal early
by pressing the key for the timer.
To use the baking timer, first enable the TIMERS viewing mode by
pressing the T1 or T2 keys. Activation is signalled by the fact that the
status bar will show the settings and the timer status (on a white
background) (fig.18 –item Q) in place of the messages about oven status
(on a red background) usually shown as standard.
The timer status is shown in the following symbols:
timer in STOP mode with countdown ready to
activate it; timer in PLAY, countdown enabled
timer in PAUSE, countdown in pause
equipment operation is needed.
Energy savings
To enable the timer T1 and start the countdown, press T1. The timer
status passes from "STOP" to "PLAY" and the countdown is enabled.
Pressing T1 again sets the timer to "PAUSE", a useful function if the
baking stage requires fillings to be added during intermediate stages.
Pressing T1 again will start the countdown from the point in which it
was stopped, setting the timer back to "PLAY". Thus, until the timer
has completed its task, as indicated by the buzzer. If the timer needs to
be stopped early, returning it to the initial setting, hold down the T1 key.
The same applies when using the timer T2.
To change the settings for the baking timer, press the "MENU" key,
select BAKING TIMER with the selection keys, then press "OK" to
open the submenu.
Scroll through the list on the display using the "SELECTION" keys to
select the following items.

(fig.19b). Each bar corresponds to 10 seconds. It is possible to de-
activate the buzzer by resetting the bars to zero. This timer status
is represented by an icon in the top bar to show that the buzzer is
disabled (fig.17 item M).
Scroll through the list with the "SELECTION" key to the required item
and press "OK" to confirm. Change the parameter with the "+" and "-"
keys and then confirm with the "OK" key. To return to the previous
screens, press the "RETURN" button one or more times.
To make the TIMER settings easier, it is possible to access the
SETTINGS screen directly from the main menu screen without passing
through the "MENU", by pressing and holding down the keys T1 and
T2.
To disable the TIMERS viewing mode and return to the STANDARD
view, press the "MENU" key and select the VIEW item with the
"SELECTION" keys and then press "OK" to open the submenu.
Scroll through the list on the display using the "SELECTION" keys to
select the following items.

"Standard": to enable the standard view

"Timers": To enable the view required for baking timer use

"Multitimer": activates the Multitimer display (6 baking timers)
(see 3.5.9)

"Metronome": activates the Metronome display (6 synchronised
cooking timers) (see 3.5.10)
Scroll through the list with the "SELECTION" keys as far as the
required item and then press "OK" to confirm.
"ECO STAND-BY" FUNCTION
The "Stand By" function serves to keep the oven warm while reducing
power consumption; this is the ideal solution during short breaks in
cooking operations.
Energy is saved by piloting the switching on of the floor and ceiling
heating elements at factory-set levels which guarantee that the oven does
not reach an excessively low temperature.
To enable or disable the function, press the "STAND BY" key. Once
enabled, the screen will turn GREEN and a specific icon will appear to
the left of the parameters.
NOTE:
The "Stand By" function puts the appliance into a sort
of "waking sleep", and as such it must not be used for baking, as it
would result in unsatisfactory quality.
NOTE:
The function can only be enabled with the oven in
START.
"POWER BOOSTER" FUNCTION
The "Power Booster" function serves to use all of the available oven
power, which is ideal when working with very large and continuing loads,
where maximum appliance speed is needed.
This is possible thanks to electronic control that can use all of the installed
power, piloting the switching on of floor and ceiling, while maintaining
the values set by the user.
Press the "BOOSTER" key to enable/disable the function. Once enabled,
the screen will become ORANGE and a specific icon appears to the left
of the cooking parameters.
NOTE:
The function can only be enabled if the oven is in
START.
"HALF LOAD" FUNCTION
The "Half Load" function allows baking with reduced power, the ideal
solution for the stages of intermittent work, where discontinued
equipment operation is needed.
Energy savings are possible leaving the piloting of the oven's rear heating
elements unchanged and piloting the switching on of the front heating
elements at the Manufacturer's factory settings. This means that the
operator must place the product being baked in the rear half of the baking
chamber, because, as already mentioned, the front element is on
"standby" and not usable for baking.
To enable/disable the function, press "MENU", select "HALF LOAD"
with the "SELECTION" key and then press "OK". Once enabled, the
screen will turn PURPLE and a specific icon will appear to the left of the
baking parameters.
NOTE:
This function is only possible if the oven is in START.

PUTTING THE BAKING CHAMBER INTO SERVICE
DUAL-TEMP MODE
The DUAL-TEMP mode is the oven control mode that allows 2
temperatures to be set, one for the ceiling and the other for the floor (fig.
18).
To enable the DUAL TEMP mode if this is not already running, press the
"MENU" key, select "DUAL TEMP" with the "SELECTION" keys (↑
