12 The hinge is articulated to cope with thick or oddly shaped foods.

2 cooked smoked mackerel fillets
4 cherry tomatoes, halved
dressing:
2 T crème fraiche
½ t lemon juice
Mix the dressing in a bowl. Refrigerate for 2 hours. Flake the mackerel on a slice of bread, top
with tomatoes and watercress, then add the other slice. Grill for 2-3 minutes. Sprinkle the
dressing over the food.
