HOW TO FILLET FISH
1. After following the instructions for inserting blades, plug the knife
into electric outlet.
2. Release the safety lock (red button) & press switch bar to activate
blades.
3. Place fish on a wood cutting board. Grasp the fish's mouth with
your first two fingers and thumb & run blade downward behind
the pectoral fin until the blade reaches the backbone (Fig. 1).
4. Turn the blade to run parallel along the backbone. Slowly work the
blade through the rib cage staying close to the spine. Continue
cutting to a point 3/4" from the tail (Fig. 2).
5. Stopping at the tail, flip the sliced portion over with skin and/or
scales against the cutting board and run the blade forward at
slight downward slant until the flesh is separated from the skin
(Fig. 3).
6. Remove the rib cage from the fish portion with a sharp knife.
7. Repeat the same procedure for filleting the other side of the fish.
