Tips for Cooking Tortillas
You can brown the tortilla to your desired color and texture.
Note: The tortilla could become crispy with too much browning.
You can apply a little bit of oil or butter on each side of tortilla during baking to get quicker browning.
Use fine flour to make the dough, sieve the flour, if necessary.
Keeping the dough extra moist, yet firm will result in smoother and lighter tortillas. Dough dries
quickly; therefore it is important to keep it covered all the time.
Do not over bake the tortilla. Do not keep the tortilla on the heated cooking plate too long without
flipping. This results in a dry and crispy tortilla.
It is important to give the mixed dough at least 30 minutes or a little longer resting time before
shaping it into dough of balls. Keep the dough covered while it rests.
Tortillas can be made without any oil. Using only water, instead of oil, results in non-fat, healthy,
hearty tortillas.
Tips for Cooking Rotis
If you can't find chapatti flour, you can substitute whole wheat flour.
If you use only all-purpose flour, your roti won't have the chewy and nutty flavor as traditional roti.
