II - OPERATING INSTRUCTIONS
This unit is designed to be used as a cooking appliance in
a watery medium and must be used exclusively by qualified
personnel in the manner set down in this instruction
manual. All inappropriate uses are dangerous.
1 - IMPORTANT
• Read this booklet carefully, as it gives important installation,
safety, use and maintenance suggestions.
• Keep this booklet handy for any future reference.
• The installation of the appliance and its adaptation to other
types of gas must be carried out exclusively by qualified
personnel.
• To limit energy consumption (electrical, water) the appliance
should not be used for long periods when empty or in
conditions that are unfavourable for optimum efficiency (e.g.,
with lid open, etc.).
• For any repairs, turn only to a technical assistance centre
authorized by the manufacturer and demand that only original
spare parts be used.
Failure to comply with the above recommendations could com-
promise the safety of the appliance.
2 - STARTING THE APPLIANCE
Before putting the appliance to use, wash the inside of the pot
carefully with warm water and detergent and rinse freely.
ATTENTION
Never put the appliance to use if the water jacket is not full.
Failure to comply with this essential point would seriously
overheat and damage the heating elements and the other
internal components.
3 - FILLING THE WATER JACKET
Fill the jacket as follows:
• Open the minimum level valve "D".
• Remove the jacket inlet threaded plug "F" located on the
safety unit.
• Let the softened water flow through the jacket inlet until a
steady trickle of water flows through the valve "D". This is a
sign that the water in the jacket is at the minimum level.
• Close the valve, add 1 litre of water and put the threaded
plug "F" back in place.
IMPORTANT
At the start of every day and with the appliance cold, check
that the water in the jacket has not dropped below the
minimum level.
This check is carried out by opening the minimum level control
valve "D", from which water should always flow freely. If this is
not the case, immediately add water up to the maximum level.
4 - FILLING THE TANK
• Check that the large discharge tap "A" is closed.
• Fill the tank by opening the two taps "B" or "C" of the hot and
cold water. The maximum water level in the tank must be at
least 4 cm lower than the rim.
• Close the lid.
5 - HEATING
• After having filled the jacket and the pot with water, connect
the power supply through the automatic circuit breaker
installed upstream of the appliance.
• Turn the power control knob "K" to " ON " (Fig. 2).
The signal lamp "L" lit indicates that the appliance is in
operation.
• Select the heating power by turning the power regulator knob
to the desired power settings, shown by the symbols on the
knob itself.
• When the steam pressure in the jacket approaches 0,45 bar
(maximum value), the safety valve "H" will start to vent.
• At this point, depending on the type of food being cooked,
lower the heat input by rotating the power knob "K" to a lower
position, until the valve "H" stops to vent steam, so as to
avoid a rapid loss of the water contained in the jacket.
6 - SWITCHING OFF THE APPLIANCE
• Turn the power knob "K" to position "OFF" and disconnect
the automatic circuit breaker installed upstream of the
appliance.
7 - END OF COOKING
At the end of the cooking cycle, open the lid carefully to avoid
being scalded by the steam or by contact with hot parts.
• To discharge the contents of the pot, open the large discharge
tap "A".
8 - JACKET SAFETY AND CONTROL DEVICES
The indirect heating pots (bain-marie) are provided with a safety
unit consisting of:
•
Pressure indicator "G" showing the steam pressure inside
the jacket;
•
Depressurization and vent valve "E" which allows the exit of
the air contained in the jacket;
•
Spring safety valve "H" calibrated for a maximum pressure
of 0,45 bar; the valve starts to vent steam when the pressure
inside the jacket approaches the above-mentioned value;
•
Threaded plug "F" to fill the jacket with water.
•
Working pressure switch (PS1), calibrated at 0.35 bar: it
makes it possible to keep the jacket pressure adjusted in a
range very close to this value.
Check the efficiency of the safety valve a first time upon
installation of the unit and afterwards at least once every
six months.
9 - SAFETY THERMOSTAT
The appliance is provided with a safety thermostat which trips
and cuts off power to the heating elements if the water in the
jacket drops below the minimum level.
To reset the operation of the appliance, after adding softened
water into the jacket unscrew the protection plug and press the
red button "I" located on the pot control panel.
10 - CLEANING AND MAINTENANCE
The power supply upstream of the appliance must always be
cut off before starting and cleaning or maintenance operation.
